This blog chronicles the lives of the Caffee Clan: Brian, Kelly, Josh, Jason, Lauren and Katelyn as we navigate life as a large, loud, military family that lives on the verge of complete chaos! I'm Kelly, AKA "Mom", "Mama", "Babe" or the "1SG's wife", I am 37, a stay-at-home-mom that dreams of someday working in the marketing field. I love photography, scrap booking, healthy eating and cooking, my family, music and dancing!! I have a fetish for gross medical stuff, like unusual diseases or strange growths, and sometimes I wish I was a midwife. As you read, you might notice that I have an slight obsession with cleaning and germ-avoidance, but do not fret, I am aware and I am working on it. And I love making lists! I have lots of opinions about lots of things and this is what is represented here! I'm not always right (wait, I'm NOT??) but I always have something to say!!!

A few of my *new* favorite things...Travel Post #4

Oh how we have been traveling! Denver to California - all over the coast and back again! I LOVE it! I absolutely love to travel! The kids have been great and so have each of the visits with our families....

I want to share some of the new things I have learned to love:

#1 - This is a SUPER fav! Buckwheat tea - it has a nutty flavor and my sweet sis-in-law mixes it with yummy black tea for a change of pace from coffee and then at night mixed with sweetened condensed milk in the evening after dinner. Delish!
PS: If you have never had sweetened condensed milk in your coffee or tea, you are missing out! It's a SUPER fav of mine in the winter, especially. SO COZY!

#2 - I learned to cook with lemon grass! I adore the flavor, but it's inedible. Jen and I learned how to crush it and ball it up when you add it to dishes so that you get all the flavor and it's easier to fish out later! LOVE IT!

#3 Galangal - it's a ginger root cousin with a really mild flavor. Awesome in Thai soups! You still have to fish it out - but it's a lot sweeter than ginger. Slice it up and add it to awesome soups with coconut milk, tofu, chicken - yum!!

#4 - this has been a FAV for a long time, but it's hard to find. I absolutely LOVE wildflower honey! I found some in a little farm and feed store in Inyokern, CA. I was there hunting for chileno peppers that my hubs loves and stumbled upon some freshly harvested honey. So good! I also got some Buckwheat honey to try and I'll let you know what I think in a later post. I love to use honey as a deterrent to allergies - if you can find some that is made from the pollens that you are allergic to it'll help with runny noses!
PS: If you only eat clover honey, switch it up! You won't be sorry and isn't it FUN to try new stuff?

#5 - This one isn't new either, but OMGOSH, how I love baby chubbiness! My sweet niece is so full of rolly goodness, it's going to kill me! I love spending time with my family - they are so awesome! I leave feeling so full and light and loved!

#6 - Korean Peanut Cookies - Uh, HELLO, where have you been all my life?? My Mom-in-law picked some up at the market in LA and I think we ate the all in 2.5 seconds! They taste like peanuty, flat, fortune cookies! Man!

Ok, so I totally realize that most of these posts are food-oriented, but what if I wasn't such a foodie? Then you would have likely not learned about these treasures, right?

Bon Appetite!

SLO Travel Post #3

We are visiting V & J in San Luis Obispo, CA right now and it has been lots of fun! We have been hanging at the beach, eating (of course! When J and I get together, food is a hot topic) and relaxing with our sweet family! Here are some pictures from our day at the beach - the kids played in the water even though it was FREEZING and we had a bonfire and roasted weenies (heeheehee) and of course made smores and just chilled and laughed and ended up with sand EVERYWHERE (mmmhhhmmmm) everywhere! Good times!
